Ingredients
1 lb mushrooms
2 T butter
1/3 cup Sour Cream
2 t flour
dash salt
dash pepper
1/4 cup minced parsley
1/4 cup shredded Swiss or Cheddar cheese
Directions
Wash mushrooms, then cut them lengthwise through stems into 1/4 inch thick
slices. In a wide rying pan over medium-high heat, melt butter. Add
mushrooms and cook, stirring often, until mushrooms are lightly bronwned
but not al liquid has evaparted (about 3 to 5 min.).
Meanwhile, in a small bowl, combine sour cream, flour, salt, and pepper.
Stir until smooth, then stir until mixture boils. Remove from heat
and sprinkle parsley and cheese evenly on top. Cover and let stand
until cheese is melted (about 3 to 4 minutes).
Place on a rack in a broiler pan; broil about 6 inches below heat for
3 to 4 minutes or until lightly browned.
