Sweet and Sour Pork

Makes 4 servings

Ingredients

1 tablespoon cornstarch
1 tablespoon soy sauce
1 pound boneless pork shoulder, cut into 1 inch cubes
2 tablespoons vegetable oil
1/4 cup water
2 carrots, thinly sliced
1 onion, chunked
1 green pepper, chunked
1 cup sweet and sour sauce
1 can pineapple chunks, drained (8 oz.)

Directions

Mix cornstarch and soy sauce together; stir in pork until well coated. Brown pork in hot oil over medium high heat. Stir in water. Simmer and civer 20 minuets, stirring occasionally. Stir in carrots, onion, bell pepper and sweet and sour sauce into pork mixture. Simmer, covered for 10 minuets, stirring frequently. Add pineapple, cook and stir only until pineapple is heated through.
