Beef and Broccoli
Makes 4 servings
Ingredients
3/4 pound boneless tender beef steak (sirlon, rib eye or top loin)
3 tablespoons cornstarch, divided
1 tablespoons soy sauce
1 tablespoon dry sherry
1 teaspoon minced fresh ginger root
1 clove garlic, pressed
1 pound fresh broccoli, trimmed
1 cup water
1/4 cup soy sauce
4 tablespoons vegetable oil, divided
1 medium onion, chunked
Directions
Cut beef across grain into thin slices. Combine 1 tablespoon each
conrstarch, soy sauce and sherry with ginger and garlic in small
bowl; stir in beef. Let stand 15 minuets. Meanwhile, remove
flowerets from broccoli; cut into bite-size pieces. Peel stalks;
cut crosswise into thin slices. Combine water, 1/4 cup soy sauce
and remaining 2 tablespoons cornstarch; set aside. heat 2
tablespoons oil in hot wok or large skillet over high heat. Add
beef and stir-fry 1 minute; remove. Heat remaining 2 tablespoons oil
in same pan. Add broccoli and onion; stir-fry 4 minutes. Add beef
and soy sauce mixture; cook and sitr until sauce boils and thickens. Serve immediatlely.
