Chilli Beef Soup
Makes 4 servings.
Ingredients
1 pound lean ground beef
1 large onion, chopped
3 cups regular-strength beef broth, or 3 beef bouillon cubes dissolved in 3 cups hot water
15 ounces tomato puree
1 tablespoon chili power
1/2 teaspoon each ground cumin and oregano leaves
1/4 teaspoon garlic powder
30 ounces kidney beans, drained
12 ounces whole kernel corn, drained
salt and pepper
1/2 cup cheddar cheese
Directions
Crumble beef into a 5-quart Dutch oven. Add onion and cook over medium-high heat, stirring occasionally,
until meat loses its pinl color and onion is soft; spoon off and discard fat. Reduce heat; stir in broth, tomato puree, chili powder, cumin, oregano, garlic powder, beans, and corn. cover and simmer for 30 minutes. Season to taste with salt and pepper.
Pass chese at the table to spoon over individual servings.
